Chef Emmanuel Corona learned to cook by watching his mother and grandmother in Mexico. They made mole, beans, and tamales, and the family sold homemade tamales from carts in Mexico City. He chose the name La Dama to honor the women who taught him.

After more than 20 years cooking alongside Peggy Magister at The Fork Café and Crazy Water, Corona opened La Dama with her in 2020. He became its owner in 2022.

The menu began with dishes he grew up making and eating, alongside cooking from other regions of Mexico. His mole poblano and mole negro reach back to those first lessons at home.
